Balsamic Roasted Asparagus and Tomatoes

  • NUCO Balsamic Vinegar
  • 1 lb Asparagus
  • 2 Cups Cherry Tomatoes Cut in Half
  • 1/4 Cup Parmesan Cheese
  • Salt and Pepper to Taste

Brussel Sprouts with Balsamic Vinaigrette

Prep Time: 10 min / Cook Time: 40 min / Total Time: 50 min – 1 hour

Ingredients: Makes (2-4) servings

  • 2 tablespoon NUCO Premium Coconut Oil
  • 1 lb brussel sprouts
  • ½ cup of dried cranberries
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Sauce ingredients:

  • ¼ cup NUCO Balsamic Vinegar
  • 1 teaspoon honey
  • Salt and ground black pepper to taste
