Vegan Mayo Dressing with Walnut Broccoli Salad

Ingredients:
- 1 Cup NUCO Vegan Mayo
- 2 Tbsp NUCO Coconut Cider Vinegar – Coconut syrup flavor
- 1/3 Cup brown sugar
- 3 Cup small diced broccoli florets, steamed or raw
- ½ Cup dried cranberries
- ½ Cup apple, diced
- ½ Cup cooked bacon, crumbled
- ½ Cup walnut, crushed
- ½ Cup red onion

- Mix the broccoli, bacon, walnuts, cranberries, apples, and onions in a large bowl
- In a second bowl, gently combine the vegan mayo, coconut cider vinegar, and brown sugar until smooth
- Before serving, toss the salad with the dressing to allow flavors to meld
